Cook Position
Job Description
The Cook manages and supervises the planning, preparation, serving and clean up related to feeding residents at Alaska Addiction Rehabilitation Services (AARS). This position also assists in the supervising of food processing at the facility. This position works a 4/10 schedule.
Essential Duties & Responsibilities:
- Supervise the preparation and serving of food.
- Follow menus according to approved dietary and nutritional standards.
- Prepare and serve lunch and dinner during planned shifts and insuring those items to be thawed are taken out on time as menus indicate.
- Prepare written orders for cooks on other shifts.
- Order supplies in cooperation with the Executive Director.
- Help with weekly/monthly / quarterly inventory of supplies and government surplus items.
- Understand and follow instructions on inventory control.
- Help supervise clients along with the Cook and Ranch Foreman in processing all produce grown at the facility.
- Supervise clients working in the kitchen.
- Report promptly to the Cook and Maintenance Manager all equipment failures and maintenance needs.
- Adhere to State / Borough safety standards as it applies to food preparation.
- Mark all food items with open and end dates.
- Monitor freezer and fridge temps to ensure they meet state standards.
- Clean kitchen and storage areas daily including cleaning grill, dish washing and putting things away, supervise client assistants, inspects, and organizes coolers/refrigerator daily, (ensuring items are used immediately and disposal of outdated items).
- Ensure that all coolers are to be cleaned and checked daily for spoilage.
- Understand proper and safe use of chemical agents for general cleaning.
- Complete documentation on the client’s progress and submits it to the client’s counselor weekly.
- Prepare special diet items as needed.
- May prepare Native Alaskan and ethnic foods as suggested by the Executive Director.
- Ensure that all donations to the kitchen are properly recorded and inspected before use and turns in to Receptionist at the end of each day.
- Prepare and submit timely reports and records to Executive Director.
- Prepare and submit incidents reports as needed both positive and negative to Executive Director and other staff.
- Required to read all policies and procedures manuals of AARS; able to pass exam manuals.
- Assist in planning food costs, kitchen equipment purchases for developing budget each year.
- Maintain Client Confidentiality according to Federal and State guidelines.
- Assume other duties as directed.
- Participate in staff meetings or review minutes within 48 hours of missed meeting.
- Participate in staff training and provided leadership for training as requested.
- Participate in probationary and annual staff evaluations.
- Review and become familiar with the Personnel Manual for AARS.
- Complete other duties as assigned.
Minimum Qualifications & Required Skills and Abilities:
- Experience as full charge cook, able to handle all phases of kitchen management, planning and cooking.
- At least one year experience as institutional cook and/or additional years working in commercial cooking or work camp operation. Knowledge of sound nutritional menu planning.
- Flexible in approach to work.
- Able to plan for a changing number of consumers, willing to substitute in an emergency, etc.
- Dependable, reliable, and able to communicate verbal and written directions.
- Good physical health for the required lifting (up to 50 lbs.) and storing of supplies.
- Able to communicate and get along with AARS residents.
- Need current First Aid card or willingness to obtain certification within thirty (30) days.
- Need current Food Handler’s Card and possess a Certified Food Protection Manager Card or obtain one within thirty (30) days.
- High school diploma or GED is required.
- Must have: Appropriate computer skills; Current TB test (obtainable within the first 30 days of employment); Current First Aid/CPR Cards (obtainable within the first 90 days of employment); Initial COVID vaccinations, provide vaccination card as proof; and a valid Alaska Driver’s License, with a good driving record and insurable.
- Must be able to pass the mandated criminal background check with an allowance for a variance.

- Has the ability to enforce client rules.
- Preferred: Familiar with Alaska Native culture; resident of Mat-Su Valley; experience working with handicapped; some experience with social service agencies; good team worker who can relate well with fellow workers; able to relate to alcoholics, drug abusers, and public inebriates, and familiar with AA/NA treatment philosophies.
- Has maintained sobriety for at least one (1) year if a recovered alcoholic/drug-abuser.

Location: AARS, Pt. MacKenzie Road
Employment Status: Full-Time (40 hours)
Starting Pay: DOE (position also includes a monthly gas allowance, health insurance stipend, and COVID vaccination bonus)
